Amaranth, also known as Amaranto, Huautli, Kiwicha and Quihuicha in Spanish, Rajgira and Ramdana in Hindi and Rajgaro in Gujarati, is an ancient crop domesticated about 7000 years ago, cultivated first by the Mayas and later by the Aztecs and the Incas. Today amaranth has gained international recognition for its high nutritional value and agricultural features. The amaranth’s seed provides fiber, protein, vitamins, minerals and all the essential amino acids including lysine. At The Artisan Cookery we source organic amaranth and hand roast it to achieve the perfect pop for a nutty rich flavor and a crunchy texture.
